Sweet Braised Red Cabbage {Phase 2}




Both sweet and a bit sour, this terrific side dish can be made in batches and is a great accompaniment for simply cooked veal or beef.

INGREDIENTS
4 cups shredded red cabbage
1 cup Basic Beef Broth
1/2 cup apple cider vinegar
2 Sachets Sweetener
2 medium apples, cored, and diced
1/4 teaspoon caraway seeds
2 teaspoons chopped fresh dill

1. Place the cabbage in a large pot. In a small pot combine the broth, vinegar, and sweetener. Bring to a boil and pour over the cabbage.

2. Cook the cabbage at a low simmer, stirring often, for 10 minutes. Stir in the apple and cook a further 10 to 15 minutes until the cabbage is tender and most of the liquid has disappeared.

3. Remove from the heat, stir in the caraway seeds and dill, and serve immediately.

Makes two servings (65 calories, 1 vegetable, 1 fruit)
